Yee Sang is literally translated as raw fish but for Chinese it means abundance and prosperity. Yee Sang is a Chinese-style raw fish salad with salmon as the main ingredient. It is usually mix with shredded vegetables, various type of spices and sauce, jellyfish, pomelo and crackers.
Loh Sang means the act of tossing salad. For Chinese it means gathering prosperity. Auspicious wishes are usually uttered during the tossing (eg. wish all of us with good health) and we usually toss as high as possible (to reach for the stars!) using a pair of chopsticks.

Loh Hei ... Loh Sang ... Gong Hey Fatt Choy!

The maitre-d putting the finishing touches on our dish...

Nearly ready...

Get ready, gang!

Loh Sang ... Loh Hei ... lets go higher! Reach the ... stars!

Here is the post-mixing Loh Sang!

It was delicious!

WHAT’S Chinese New Year without yee sang? Well, to many of my Chinese friends, it’ll mean missing out on a tradition to “raise” good luck for the coming year.
They literally “raise” the good luck by tossing the raw fish salad with chopsticks and shouting “loh hei” as they do it. The higher they toss the yee sang, the better will be their luck as well as prosperity, vigour and longevity.
By having fish, one wishes for “a surplus every year” and having it raw spells liveliness, prosperity and longevity.
